Winter is long in her way and dawdled at the start but she is drifting heavily now, like sand in gentle waves. Snow, so much snow. And wind! She is mustering a fine bluster, tired trees falling like golden leaves.
I pray she is talking with you wherever you are; pray you are talking back. Walking with her.
I write you today with only an opportunity. This Spring’s Kincentric Table, our sacred and ceremonial Beef and Goat Field Harvesting Class, sold out nearly immediately! 10 tickets were snatched quite quickly. And so we are offering another class on May 16th - 18th (but it is already half-filled so I write with a sense of urgency).

About the course….
This is NOT an ‘instructor shoots a dull and castrated cow in a barn stall’ sort of workshop. Maybe those have their place. That is not this course. Our classes are community centered on sacredness—a wildness hitherto unfelt in agriculture, a yearning for the ceremony of Homo sapiens the mammal and not the modern and stall-stationed alternative.
The Kincentric Table is a 100% hands-on field harvesting and finer processing workshop where the students do EVERYTHING! It is focused on Sacred and hands-on experiences.
Learn the Wildland’s pioneering field harvest technique that pairs sacred ecology, kinship, and low technology and spend days in our state-of-the-art processing center to learn how to harvest and process your family’s provisions with both ceremonial and educated skill.
In this 3-day, intimate class, we will become Earthlings. Together, we will work to unbind and untether ourselves from the uncreative sciences of today and learn our humanity through the sacred gift of the field harvest. No corrals, no cages, no fear.
If you are yearning to learn the sacred art of the field harvest and whole animal utilizing and processing, this is for you!
Using nothing but our hands and simple, human-scale tools, we will track the herd in over 400-acres of the Wildland and then harvest a Wildland bull and goat buck while they are yet with their herds, letting go of our control and allowing the herd's ceremony to rise and walk with us, amongst us, unabated.
We will cry together. We will light fires and eat while we work, honoring and learning what we honor.
From this space, we will then work to break down a 30-day dry aged bull and aged buck that were prepared in advance without creating any waste. In place of a 60% carcass yield that is common in processing today, we will learn how to utilize 100% of the animal, our cousin, continuing to honor each ligament, each muscle, each ounce of life that is waiting to be reborn. We will also begin the tanning and hide preserving process (fleshing, salting, and more).
By the class's end, you will leave with the inner confidence and physical know-how to harvest cattle and goats at home, kincentrically.
